15-minute quinoa salad

Quinoa Salad

Makes 4 Servings | Prep Time: 5 Minutes | Cook Time: 15 Minutes

Quinoa salad with meatballs

For the quinoa:

• 1 c quinoa, rinsed
• 1.5 c water or broth
• 1 tbsp butter or 1/2 tsp olive oil
• 1/2 tsp salt

For the salad:

• 1 can black beans, rinsed
• 1 mango, peeled and cubed small
• 3 scallions, chopped
• 1 tbsp cilantro, chopped small

For the dressing:

• 1 tbsp raw honey
• 2 tbsp red wine vinegar
• 1 tbsp olive oil

1) Make the quinoa - In a small saucepan, combine quinoa, broth, butter, and salt. Bring to a boil, then reduce heat to medium and cover with a lid to cook for 15 minutes.

2) Prep and chop the salad ingredients. In a small bowl, combine the dressing ingredients and whisk until combined.

3) Once the quinoa is done cooking, combine everything in a large bowl and mix.

4) Serve and enjoy! This is delicious served on its own or paired with a quick protein such as sausage or these incredible Amylu GF Teriyaki Pineapple meatballs from Costco

5) Store in fridge for up to 4 days. Serve at room temp or warmed up, whatever suits your fancy!
